This has been a banner year for wild mushrooms. The fall is prime mushrooming season anyway but this year was especially good because of all of the wet weather.Here is a wonderful mushroom called the Comb Tooth Mushroom (Hericium Coralloides).
We found it on a decaying maple tree on our morning walk. Usually this mushroom is found high up on trees, but we were lucky to find it within reach. It is a tasty edible with a wonderful sweet taste that is nice sautéed in butter or baked.I made a delicious omelet with this mushroom, a little cheese and wonderful fresh roasted Sandia peppers from the Garlic & Arts Festival. These peppers are grown in Montague from New Mexico seed and they are roasted in a drum roaster just as they do at farmer’s markets and roadside stands in the Southwest. Yum!
